Yummm! I thought I should add an interesting side page, and I though a cookie recipe would be the perfect thing!! :’D I know some of you don’t like coffee, or possibly chocolate, but just try them, and if you don’t like them then just give them out! Seriously baked goods are powerful.

Coffee-Chocolate-Macadamia Spreads

( From Lee Bailey’s Country Desserts cookbook )

1 1/2 cups sifted whole wheat flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup ( 1 stick ) plus 2 tablespoons ( 1/4 stick ) unsalted butter, softened

1 1/3 cups firmly packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon super fine coffee grounds or instant espresso

3 oz. unsweetened chocolate, melted and cooled to room temperature

3/4 cup macadamia nuts, halved

Preheat oven to 350 degrees. Lightly grease 2 cookie sheets. Set aside.

Combine the flour, baking soda, and salt. Set aside.

Cream the butter and brown sugar until smooth, about 4 min. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla and espresso.

Add the flour mixture, one third at a time, beating well after each addition. Blend in chocolate and fold in nuts.

Drop in 2-tablespoon clumps onto the prepared sheets, leaving plenty of room for them to spread out. ( That’s why they are called “spreads!” :D )

Bake for 12 min, or until soft and lightly crisped around the edges. ( I usually do a little more because I like them a little crispy ) Remove to a cooling rack. They will harden as they cool, so make a cup of tea or pour yourself a glass of milk while you wait!
